Fish Tacos with Mango Salsa

When we went out West this past summer one of our stops was Las Vegas where my husband's cousin Diane lives. After one of our day-trip outings Diane introduced to us the wonderful world of fish tacos! Her husband Greg had some Alaskan halibut (that he caught while in Alaska!) which he grilled to perfection. The most fun thing was getting a "lesson" from Diane as to how to construct our tacos with all the sauces and fixins! Fortunately I videoed the presentation 😁. That night with Greg, Diane, and their daughter Natalie was arguably the most fun event we experienced in Vegas! Diane's tacos are garnished with what she calls " B sauce " 😜, cabbage, avocado, mango salsa, pico, cilantro, and lime. Orange Cranberry Biscotti

Lately I have had this thing with cranberry orange stuff.  (I blame  Highland Gourmet Scones for this - their Cranberry Orange scone is an all-time fav.)  So, my husband and I had COVID recently and it took away a good bit of our taste and smell.  As we have begin to emerge and heal, some taste has returned and so I sought out a new biscotti recipe.  We love our coffee in the morning and any delicacies that can go with it, especially now that we can taste more of it!   I found this recipe through my Yummly app and it seemed simple enough.  I love the idea of steeping the cranberries in boiling water to tenderize them.  I added 1/2 sliced almonds to the batter but it probably would have been better if I had toasted them first.  I make chocolate-cinnamon biscotti every Christmas so I am familiar with how crispy it needs to be.
