Caramel Apple Bundt Cake

I am excited about this post! I love trying new desserts on my kids on special occasions. Our middle daughter had a birthday last month and I wasn't available to celebrate with her, so naturally, I asked her over and made a cake in her honor.  

Anna Kate loves caramel apples so I found this gem.  It was pretty simple to make - the most laborious effort went to the peeling and chopping of the apples.  It took an additional several minutes for mine to set (used the skewer method) and I was hoping it wasn't going to cause the cake to be dry.  Also the directions say at the very end that if you overstir the batter it can make the cake tough.  Even before I folded in the apples and pecans the batter was super thick and hard to stir, so I thought that was an indication that I had overmixed.  But apparently I didn't because the cake turned out wonderfully moist and delish.  The only regret I have is using Gala apples instead of Granny Smith (I have never even seen Jonagold in any store).  The tartness would have balanced out the sweetness better.

This was so fun to make.  The caramel sauce added an extra gooey aspect that I loved.  Also it went perfect with a good cup of coffee.  I believe Anna Kate enjoyed it although she's not one to gush 😆 (she's not a poser but I snagged a pic!). I do know she appreciated the effort.  I hope you get to make this fun fall dessert!

A Southern Girl's Chess Squares

So my last post was about healthy food and this one, well, is not so much! But it's such a popular dessert I had never made, that I decided this was my opportunity. Baja Chicken Bowl - Low carb

I love the Baja chicken bowl at Panera!  Not until I decided to make one myself did I realize why.  I love the combination of hearty quinoa, the zing of grape tomatoes, corn and Verde salsas, and lime - balanced with my favs avocado and feta - then topped with a dollop of magical Greek yogurt.  Who knew that could change everything? Cranberry Bars

During the quarantine I saw I had a bunch of bags of cranberries in my freezer (I stock up on them to make smoothies). I decided to look for a new recipie I could use them in. Well, I found a winner! The "test kitchen" attempt was in the spring, but I decided it would be a perfect dessert for the holidays. This year, I made three different batches for different occasions! It has been a favorite for sure.  The addition of the orange zest makes it special. I love the zing of the zest combined with the tart berries. Together they complement the sweetness super well. I have used both pecans and walnuts. Both work great but pecans are my fav. And ignore where it says that powdered sugar dusting is optional.
