Caramel Apple Bundt Cake

I am excited about this post! I love trying new desserts on my kids on special occasions. Our middle daughter had a birthday last month and I wasn't available to celebrate with her, so naturally, I asked her over and made a cake in her honor.  

Anna Kate loves caramel apples so I found this gem.  It was pretty simple to make - the most laborious effort went to the peeling and chopping of the apples.  It took an additional several minutes for mine to set (used the skewer method) and I was hoping it wasn't going to cause the cake to be dry.  Also the directions say at the very end that if you overstir the batter it can make the cake tough.  Even before I folded in the apples and pecans the batter was super thick and hard to stir, so I thought that was an indication that I had overmixed.  But apparently I didn't because the cake turned out wonderfully moist and delish.  The only regret I have is using Gala apples instead of Granny Smith (I have never even seen Jonagold in any store).  The tartness would have balanced out the sweetness better.

This was so fun to make.  The caramel sauce added an extra gooey aspect that I loved.  Also it went perfect with a good cup of coffee.  I believe Anna Kate enjoyed it although she's not one to gush 😆 (she's not a poser but I snagged a pic!). I do know she appreciated the effort.  I hope you get to make this fun fall dessert!

Our Favorite Chicken Pot Pie

Few things are more comforting than crescent rolls with yummy chicken goodness. There are many ways you can make chicken pot pie. I've tried several ways and the winning method was one I adapted by taking some from Joanna Gaines' recipe and some from another recipe I already had. I've made it with ready-made pie crust - both one-crust and two-crust. It just pales in comparison to the crescent roll top. I love how you can customize the dish to however small or large you want. You might even want to add hard boiled egg! That would be a "No" for my husband, but bring on more peas and he's happy. It's definitely a great supper for any time of the year! Skinny Zucchini Lasagna

OK back to the healthy meals! I discovered this recipe when I was doing a keto diet some years ago. It has become not only my favorite keto meal but one of my favorite meals overall. It is low carb and low calorie because not only does it replace pasta with zucchini noodles but also ricotta with cottage cheese. You can also use ground turkey instead of ground chicken.  It takes a while at the front end because you have to prep and grill the zucchini slices. I went ahead and invested in a mandoline for easy and even slicing. Also, I typically use my gas grill instead of a grill pan or panini press.  There are a lot of slices so I found the outdoor grill afforded me more space so I could grill them all at once.  As for the sauce, I am still working on that balance. I guess you could just use regular pasta sauce and be done with it; but, if you make your own it can tend to be runny so I try to thicken it up with tomato paste and some flour.
