Christmas Trash

My first few years of teaching over 20 years ago were rough to say the least; however, the relationships that developed there over time with students, faculty, and staff, I cherish to this day. Every Christmas the lady in the front office would make this incredible snack that I looked forward to each year during exam week. She always brought a huge bowl of it and had fun cups or plates so we can "scoop and go" during those busy days. It just wasn't Christmas without it. She called it "Trash" because it had a little bit of everything in it! I just had to have the recipe. It has been a staple in my Christmas baking routine ever since. When I first began making it many asked for the recipe, so to distinguish mine from others, I called it "Sarah's Christmas Trash" although it totally didn't originate with me!

Marty, the office receptionist began a trend that would last for years to come. She and so many precious people I had the privilege of teaching alongside made a mark on my life. So much so, that after I left that school to teach elsewhere and to chase other dreams, I have found myself right back. I came back to the same school 9 years ago, and continue to benefit from my relationships with some awesome folks. And I continue to carry the Christmas Trash tradition. Thanks, Marty, for your kind spirit and yummy holiday snack that will outlast us all!

Our Favorite Chicken Pot Pie

Few things are more comforting than crescent rolls with yummy chicken goodness. There are many ways you can make chicken pot pie. I've tried several ways and the winning method was one I adapted by taking some from Joanna Gaines' recipe and some from another recipe I already had. I've made it with ready-made pie crust - both one-crust and two-crust. It just pales in comparison to the crescent roll top. I love how you can customize the dish to however small or large you want. You might even want to add hard boiled egg! That would be a "No" for my husband, but bring on more peas and he's happy. It's definitely a great supper for any time of the year! A Southern Girl's Chess Squares

So my last post was about healthy food and this one, well, is not so much! But it's such a popular dessert I had never made, that I decided this was my opportunity. This weekend is Family Reunion weekend and my husband's extended family is quite extensive! Lots of people. Lots of food. So why make chess squares? Well, first of all, I am sure they will all be eaten so fewer calories for me lol. Secondly, I have been wanting to try them because some time ago my sister-in-law made some and my youngest step-daughter raved about them. So, this post is dedicated to Molly!  Three things I know that Molly likes are butter, sugar, and cheese! This recipe is a creative combination of those ingredients plus just 2 more. Super easy. Mine didn't look ready after even 50 minutes so I put them under a low broil for a couple of minutes to get the browning on the top. I let them cool overnight and cut them with a plastic knife. Baja Chicken Bowl - Low carb

I love the Baja chicken bowl at Panera!  Not until I decided to make one myself did I realize why.  I love the combination of hearty quinoa, the zing of grape tomatoes, corn and Verde salsas, and lime - balanced with my favs avocado and feta - then topped with a dollop of magical Greek yogurt.  Who knew that could change everything? Despite it's health benefits, I have a hard time enjoying that food item any other way.  And speaking of health benefits, I made my version low carb by using seasoned riced cauliflower.  And if you need a quick weeknight meal, stock up on pre-made ingredients and you're set in minutes.  Making your own copy-cat recipes from places you enjoy is so much healthier because you are the creator and in control of all of the ingredients.  No surprises of added sugars, preservatives or other icky stuff (unless you throw something in there having not read the label!).
