Breakfast Enchiladas

Several fun stories with this recipe. I admit salsa and eggs for breakfast never appealed to me until we stayed at a bed and breakfast in North Carolina. That was our breakfast one morning, and to my surprise, it was amazing! I just figured salsa was something that only made sense with a Mexican dinner. And with eggs?? Ew! Well, as I consumed every bite, all I kept thinking was "where has this been all my life??" 😆
I absolutely love Mexican food so this recipe of breakfast burritos really grabbed my attention, especially since I was searching for Keto recipes at the time. It is a perfect Keto meal any time of the day and it is super fun to make!
I used small omelette pans in the photo but with all the filling, it makes the egg "tortillas" hard to roll and keep from unfolding in the dish. I sometimes use a 10-in skillet and am able to fold the edges so as to keep the filling intact (you'd need more eggs for this). It is helpful to have two pans making the tortillas simultaneously in order to cut down on prep time. 
Now, in the picture, I added a side of grits which totally makes it a non-Keto meal for sure. But it goes really well with it! I garnished it with leftover filling. Not pictured is avocado and pico which you should definitely not forget! And perhaps a little sour cream.
Although a bit time-consuming, it's so worth it. You can actually make everything ahead of time and put it all together and bake it in minutes. You simply must give this a try!

Few things are more comforting than crescent rolls with yummy chicken goodness. There are many ways you can make chicken pot pie. I've tried several ways and the winning method was one I adapted by taking some from Joanna Gaines' recipe and some from another recipe I already had. I've made it with ready-made pie crust - both one-crust and two-crust. It just pales in comparison to the crescent roll top. I love how you can customize the dish to however small or large you want. A Southern Girl's Chess Squares

So my last post was about healthy food and this one, well, is not so much! But it's such a popular dessert I had never made, that I decided this was my opportunity. This weekend is Family Reunion weekend and my husband's extended family is quite extensive! Lots of people. Lots of food. So why make chess squares? Secondly, I have been wanting to try them because some time ago my sister-in-law made some and my youngest step-daughter raved about them. Baja Chicken Bowl - Low carb

I love the Baja chicken bowl at Panera!  Not until I decided to make one myself did I realize why.  I love the combination of hearty quinoa, the zing of grape tomatoes, corn and Verde salsas, and lime - balanced with my favs avocado and feta - then topped with a dollop of magical Greek yogurt.  Who knew that could change everything?
