Raspberry Valentine Heart Cookies

We went to Mentone a couple of years ago and there was a quaint little bakery that sold Raspberry and Almond Shortbread Thumbprint cookies. They were delectable! Well, the owner actually gave me the recipe. 🙂 Since shortbread dough is so versatile, I decided to make flat heart-shaped cookies for Valentines this year! ❤

I simply pressed out the chilled dough onto a floured surface and used cookie cutters to make different sized hearts. I pressed the dough slightly in the center and spread the jam (I couldn't find seedless, oh well) with my finger into a rough heart shape. I watched them as they baked since they were different sizes. The recipe says to bake "until lightly browned" but by then they may be too crunchy.

This is such an easy recipe for a cookie dough that can be shaped any way you want. I think I'll make bells for Christmas!

Our Favorite Chicken Pot Pie

Few things are more comforting than crescent rolls with yummy chicken goodness. There are many ways you can make chicken pot pie. I've tried several ways and the winning method was one I adapted by taking some from Joanna Gaines' recipe and some from another recipe I already had. I've made it with ready-made pie crust - both one-crust and two-crust. It just pales in comparison to the crescent roll top. I love how you can customize the dish to however small or large you want. You might even want to add hard boiled egg! That would be a "No" for my husband, but bring on more peas and he's happy. It's definitely a great supper for any time of the year! Skinny Zucchini Lasagna

OK back to the healthy meals! I discovered this recipe when I was doing a keto diet some years ago. It has become not only my favorite keto meal but one of my favorite meals overall. It is low carb and low calorie because not only does it replace pasta with zucchini noodles but also ricotta with cottage cheese. You can also use ground turkey instead of ground chicken.  It takes a while at the front end because you have to prep and grill the zucchini slices. I went ahead and invested in a mandoline for easy and even slicing. Also, I typically use my gas grill instead of a grill pan or panini press.  There are a lot of slices so I found the outdoor grill afforded me more space so I could grill them all at once.  As for the sauce, I am still working on that balance. I guess you could just use regular pasta sauce and be done with it; but, if you make your own it can tend to be runny so I try to thicken it up with tomato paste and some flour.
